Portuguese starter: marinated carrots

Marinated carrots

Served at most regional restaurants (along with cheeses and olives), these marinated carrots are  delicious. Here’s my version:

Carrots (sliced, thick 1″ slices) and steamed (not mushy)

Marinade: (to taste)

olive oil, salt, cumin, chopped garlic, chopped fresh cilantro (coriander)

Voilá!
